The greatest spare ribs in the world?

Everyone has their own favourite barbecue recipes , chinese, hickory smoked or honey glazed but I do some home made ones that are pretty fine. The secret is to balance sweet and savory ingredients so here are:

  • Heinz Ketchup
  • Apricot jam
  • Honey
  • Crushed coriander seeds
  • Soy sauce
  • West Indian chili sauce
  • Medium chili powder
  • Ground cumin
  • Crushed garlic
  • Celery salt
  • Worcester sauce
  • Salt & pepper
  • Small amounts of oil and wine vinegar

Mix it all up, add the ribs and leave to marinate for for 6 hours or overnight in the fridge. The cook covered at 180 for an hour and a half and finish on the barbecue. Serve with coleslaw and 100 yards of paper napkins.
